Explanation of the vinification method used

The grapes are harvested in small boxes of 15 Kg. It is only harvested in the early hours of the morning to maintain a good temperature in the grapes until they arrive at the winery.. We select the grapes one by one, choosing only the healthiest and most mature. Crates of grapes are stacked inside the cellar, which is located a few meters from the vineyard, and get cold, avoiding heating the grapes.

Once the grapes have cooled, the grapes are destemmed and the grapes are gently broken down, thus achieving an abundant extraction of aromas taking into account that the grapes have been kept at temperatures much lower than those of the environment.

white fermentation: After destemming, the resulting paste is pumped into a stainless steel tank where the temperature is reduced to subject the grapes to cold maceration for, then it is very lightly pressed and the must is allowed to spontaneously ferment without adding yeast in stainless steel tanks.

black fermentation: After destemming, the paste is pumped into stainless steel tanks, where, just like the whites, will spontaneously ferment without adding yeast, avoiding that the fermentation temperature exceeds 25ºC and the bazooka and sinking the sombrer at least twice a day so that the grapes extract all their aromas

When the wines are fermented, incubated in oak barrels of different capacities. The aging tries to be done with the different varieties separately and the mixture is not made until the days before bottling., since each variety has an optimal aging and refining time.

Finally, the bottling process is carried out in our own winery with all the required hygiene and quality protocols, closing the bottles with high quality natural cork stoppers.
